Made on the banks of Lough Erne, outside Enniskillen, Co. Fermanagh, Boatyard Double Gin is being produced from grain to glass at their facility.
They distil elements of their own base spirit on site. Using Organic floor malted wheat and champagne yeast, they create a spirit at 96%abv which when diluted stills retains the weight and breadiness of the yeast. While distilling this base spirit, juniper is introduced, giving it it's first hint of flavour, showcasing that this spirit will only be intended to make gin.
It gains it's 'Double' Gin status, as of course Juniper is added again during the infusion of the botanicals, which are left to macerate for 18 hours.
The resulting product has a classic juniper driven first release of flavour, intertwined with citrus fruits, and warm liquorice spices. An outstanding addition to the Irish Gin scene.
