Les Caves de la Loire Sauvignon Blanc, Wally, was so irresistible that we just had to add it to our list. The Sauvignon Blanc is zesty with lively acidty, hints of passionfruit and gooseberry with great balance and a clean finish. The grapes are kept in a cold room at 16°C before being put into a stainless steel tank for fermentation at 14°C. After fermentation the wine is kept on its less for 3 months and stirred to add depth and complexity. The 5g/l of residual sugar in the wine is just enough to give the wine a touch of richness on the palate without giving it sweetness.
