The AOC Faugères 2012 was made from a blend of 60% Grenache , 25% Carignan and 15% Syrah and Mourvèdre from ‘Mas de Lanus ‘ vines from the commune of Autignac . Our Grenache vineyard is on a northwest slope which consists of fine grey schist . The orientation of the slope, which encourages slow ripening, doesn’t cook the fruit. Therefore the Grenache is ripe yet not overly alcoholic. Carignan is sourced from an ancient vineyard of goblet vines that were minimally pruned and produces less 15HL per hectare. The fruit here is more rustic with fine tannins. The vineyard has been minimally worked to avoid compaction of the subsoil and sprayed with organic sprays to prevent mildews that are common in the district.
The grapes were harvested by hand when it was determined that the sugar, acidity and taste was to our liking. The grapes were crushed and de-stemmed and placed in a thousand liters fermenter with open tops. No yeast culture was added to the fermentation was completely natural. Temperature and nutrient levels were closely monitored and ferment lasted ten days. All varieties were vinified separately. The wine was racked and sulfur dioxide was added after full malolactic fermentation to preserve the wine from oxidation.
