G de Château Guiraud is produced from 15 hectares, consisting of 70% Sauvignon and 30% Semillon with an average vine age of 15 years. "G" is a dry white wine made of ripe but not botrytis-effected grapes as in their sweet wines.
The grapes are harvested choosing the ripest bunches or portions of bunches. After pressing and keeping only the very first juice, the fermentation takes place at a low temperature in order to ensure the freshness of the resulting wine. It occurs in oak barrels and the lees are regularly stirred for the first 3-4 months adding to the complexity of the wine. Barrel aging usually lasts for 9 months.
