Aged in American oak casks, in the humid and salty environment of Sanlúcar de Barrameda, a small town located on the estuary of the river Guadalquivir.  Of a pale straw colour, with a hint of the sea breeze on the nose and the palate.  It is the perfect dry aperitif, an ideal match for fish and seafood.

Emilio Lustau, one of Spain's greatest Sherry bodegas, is named after Don Emilio Lustau Ortega, son-in-law of founder Don José Ruiz-Berdejo y Veyan. Don José, of French descent, founded the family firm in 1896 at his home in Nuestra Señora de la Esperanza, but in the 1940s Don Emilio moved the firm to the Santiago district of Jerez. The firm saw significant expansion, and joined the ranks of the top Sherry producers under Don Emilio's name. The family home was never abandoned, though, and in the 1970s extensive cellars were constructed there. Emilio Lustau is now a leader in Sherry production, certainly when judged on quality.

"The usual thing to say about Papirusa Manzanilla is that it is hugely influenced by the sea, and this is certainly true. On the other hand, the same can be said for the wines of Porto, Bordeaux, Rias Baxias and the western end of the Loire. However, none of those wines has the brine of the sea spray that fills the nostrils when you inhale from the top of a glass of an exquisite Manzanilla. The nearby salty marshlands of the swampy river basin of the Guadalquivir River flowing south from Seville is the better candidate for saltiness. It combines with an ovoid silky mouth-feel and a lip-smacking dry, cutting finish. This complex, exhilarating wine could not be further from its image of creamy sweet cough mixture. Sherry's image was hijacked by cream sherry in the 1970s, and wine lovers need to steal it back."  -The Sunday Business Post Magazine, 24 February 24 2013
