In the vineyards near the village of Pedrosa de Duero, Pago de los Capellanes harvest 5000kg/ha - well below the 7000kg allowed by the Regulatory Council of the Ribera del Duero region - to guarantee the highest quality. The wines age in new barrels for 1-3 years in a selection of 22 types of French oak with different levels of air dryness (24 to 60 months) and toasting depending on the wood's origins (Allier, Nevers, central France). There are 5 red wines produced, each made with 100% Tempranillo grapes: Young Red, Crianza, Reserva and special parcel wines; Nogal and Picón.
