The inland climate in the city of Jerez de la Frontera provides a more rounded and fuller style of wine. Only 2 of 708 casks have been set aside by our Capataz Manuel Lozano to be bottled, chosen for their finesse.

This wine has a pale gold colour and soft, balsamic aromas, with notes of resin and bitter oranges. It is full bodied and elegant on the palate, with a tangy finish.

The '3 en Rama' range comprises a Fino from Jerez de la Frontera, another from El Puerto de Santa María and a Manzanilla from Sanlúcar de Barrameda, each town located at an apex of the Sherry triangle. To obtain the purest Sherry, Lustau established 'enrama' style, which means bottling the wine straight from the cask with no additional treatment.

This process usually takes place in Spring, when the layer of living yeast, known as flor reaches its zenith. Thus, Sherry’s natural character is fully maintained and the resulting wine is one of great personality, influenced by the microclimates of the city in which is aged.

Palomino (100%)

Palomino Fino is a white grape variety widely cultivated in Spain. It is the principal grape used in the production of sherry, a fortified wine from the Jerez region of Spain. It thrives in the albariza soil of Andalusia, producing a wine that is low in acidity and sugar, ideal for the unique sherry-making process. Its susceptibility to oxidation is a trait that is actually beneficial for sherry production as it leads to the desired unique flavors. Flor yeast is essential in this process, forming a layer on top of the wine that protects it from oxidation and imparts distinctive flavours. This aging under flor contributes to the dry, complex profile of sherries, distinguishing them from other wines.

Jerez wine region is a part of Sherry Triangle, a triangular land mass formed by the towns of Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. The region is in the southern part of Spain close to the Atlantic Ocean in the Andalusia wine region.
