Pot Still Irish Whiskey is a style of whiskey unique to Ireland. The guidelines require the whiskey to be made from at least 30% malted barley and at least 30% unmalted barley, with up to 5% other unmalted cereals (e.g Rye, oats) if necessary. It must be batch distilled in copper pot stills, matured for at least 3 years in wooden casks, and bottled at no less than 40%abv. All this must take place on the island of Ireland.
While the market for pot still whiskey was monopolised by Irish Distillers, Teeling are now producing Pot Still Whiskey, as is the Walsh Distillery and the new Tullamore D.E.W distillery. It is clear that pot still whiskey is a high priority for the new distilleries and we expect to see more releases in the future.
