This is a sparkling wine made using the ancestral method, elaborated following the old method (pétillant naturel or 'pét nat'), based of only one fermentation, without adding neither sugar nor yeast. Fermentation starts in clay amphora of 1000 litres with the grape skins, and it ends in the bottle. It is sealed with cork and crown in the ancestral style.
A bouquet of white flowers, almond tree and quince on the nose. As the wine opens up, it begins to reveal notes of fennel and mandarin skin in harmony with pear and green apple notes and a touch of salinity.
