This adaptation of a 16th century recipe is a re-creation from the early modern age, but seems unusually contemporary. A blend of fresh grape juice and young Bas Armagnac, this light aperitif is versatile and has mass appeal.
A blend of 50% Colombard and 50% Ugni Blanc, production consists of 100% free-run juice which is settled and decanted. Once a year, the fresh grape juice and young Armagnacs are blended in a closed vat. This is the Floc and is left to settle until the end of winter.
Straw-coloured with a nose of honey, candied fruit, quince and stone fruit. Intense and invigorating on the palate with subtle and appealing grape, peach and citrus flavours with a distinct acidity and sweetness is not overpowering.
Should be served chilled. Pairs well with chocolate and ice cream desserts.
