The microclimate in Sanlúcar impregnates the yeast growing on the surface of the Manzanilla with a rare sea salt character. Only 2 of 135 casks have been set aside by our Capataz Manuel Lozano to be bottled, chosen for their delicate and rare characteristics.
This wine shows an elegant straw colour with golden hints. It has bakery and camomile aromas and a mineral background. On the palate it is deliciously long, crisp and almost saline.
The '3 en Rama' range comprises a Fino from Jerez de la Frontera, another from El Puerto de Santa María and a Manzanilla from Sanlúcar de Barrameda, each town located at an apex of the Sherry triangle. To obtain the purest Sherry, Lustau established 'enrama' style, which means bottling the wine straight from the cask with no additional treatment.
This process usually takes place in Spring, when the layer of living yeast, known as flor reaches its zenith. Thus, Sherry’s natural character is fully maintained and the resulting wine is one of great personality, influenced by the microclimates of the city in which is aged.
