The brain child of YellowBelly Beer’s Head Brewer, Declan Nixon, and Brew Dog's Brewing Manager, John Allen, ‘Kottbusser’ is a long forgotten beer style which is now being revived over the course of two brews, a sour iteration at YellowBelly Beer in Wexford Ireland and a non-sour iteration at BrewDog’s Ellon Brewery in Scotland.
Kottbusser is one of many lost or forgotten German ale styles. Like many Northern German styles of the 1800’s, Kottbusser was a sour, similar in acidity to its relative, Berliner Weisse. Historically Kottbusser was brewed with Pilsner malt, wheat, oats and honey.
For the first sour interpretation, the joint brewing team have used Scottish heather honey, Mr. Jeffares Wexford Blackcurrants and have hopped heavily in the whirlpool to create a truly magnificent beer.
