Bright yellow colour with green tinges. On the nose, intense flowery notes mingled with citrus and mineral tones. The palate is fresh and balanced, light bodied with a zesty finish.

This family wine estate, covering around 30ha is the project of vigneron Romain Dol and his father. The estate enjoys a rare mixture of Mediterranean influences along with the Luberon highland climate of northern Provence. A variety of Oligocene soils - marl, limestone, sandstone and sandy clays (safres) - is farmed sustainably without use of fertilizers or herbicides and Le NOVI is certified organic.
