Garnier Chablis

Domaine Garnier Chablis comes from a passionate small family producer in Ligny-Le Châtel using only the wild, natural yeast present on the grapes - a risky and slow process. Instead of completing the fermentation in 8-10 days, a wild yeast fermentation last for months. But the payoff is a wine of much greater complexity having spent so much time on its lees.

Fruity, unctuous character. The aromatic expression tends to notes of candied lemon and apricot while keeping its characteristic Chablis freshness. A racy streak of minerality adds to the zest and complexity of this wine.

"Gooseberry on the nose followed by intense citrus flavours on the palate. Juicy lemon comes through intensely in the mouth with a long lift at the end. Some notes of orange peel and green apple crunch too. A very nice, easy-drinking wine." 91 points (2018 vintage), Decanter

"From a small family producer comes this full-bodied and punchy Chablis with generous orchard fruit notes that range from quince and apple to apricot, before an underlying minerality whips things towards a saline, zesty finish. Slow fermentation with wild yeasts has allowed an extended period on the lees, adding to the complexity and making this wine well able for a range of seafood flavours and textures, so one for a platter perhaps." Wine of the Week (2018 vintage), Aoife Carrigy, Irish Independent, 30 January 2021
