After studying winemaking in Dijon and working abroad in South Africa and Australia, young vigneron Florian Mollet took over his family Domaine in 2000 with the idea of making it one of the great estates in Sancerre. He had a bit of head start when you consider that Mollet controls the Clos du Roc de l’Abbaye’ vineyard, one of the great terroirs of Sancerre, which has been in the family’s holdings since 1850.

Located on the eastern side of Sancerre, Domaine Roc de l’Abbaye by Florian Mollet is one of few estates in the appellation to be planted entirely on flint soils. This soil, known as ‘silex’, represents just 15% of the Sancerre appellation and is coveted for its geological make-up, which produces wines with expressive gunflint aromas and a taut character. The history of the estate began in 15th century when the nearby Abbey identified four hectares of silex soil and named it Domaine du Clos du Roc.

Sauvignon Blanc (100%)

Sauvignon Blanc is a vibrant, aromatic white grape variety known for its zesty acidity, expressive character, and unmistakable freshness. Originating in the Loire Valley—home to benchmark wines like Sancerre and Pouilly-Fumé—it has found success in regions around the world, from Marlborough in New Zealand to Bordeaux, California, Chile, and South Africa. Typically dry and unoaked, Sauvignon Blanc bursts with flavours of citrus, green apple, gooseberry, and tropical fruits, often layered with notes of cut grass, bell pepper, or flint, depending on the climate and soil. Cool-climate examples are lean and mineral, while warmer styles can be more generous and fruit-forward. Its crisp, mouth-watering profile makes it a natural partner for seafood, goat cheese, and fresh herbs. Whether sharp and steely or rounder with a touch of oak, Sauvignon Blanc remains a go-to choice for lovers of lively, expressive white wines.
