Albillo Real is a grape variety recovered from those that before the phylloxera could be found usually in Castilla-La Mancha and neighbouring provinces to the north. A low yielding, short cycle and resistant to drought grape variety, which is one of the first to be harvested in the region. A small percentage of the wine is aged in French oak barrels of 600 liters and the rest, as our ancestors did, in amphore.
Lemon yellow with golden reflections, dense. Intense complex nose, mineral with red apple and aromatic herbs, hints of cinnamon in a background of quince, an elegant evolution. On the palate it is a wine with nerve, with volume. It is unctuous and the medium and persistent acidity gives it expressiveness. In the aftertaste, memories of aromatic herbs and the red apple come back and it invites to a second sip to show the character and prove it is a different wine. Its acidity and structure is ideal for small game meat, scrambled mushrooms, pasta with white sauces.
