Something of a modern classic from New York City circa 2005, this variant of the Penicillin is given the BAR 1661 treatment by ditching the scotch and using one of the only Irish peated whiskeys produced on the island.
This is a smoke, citrus and spice forward cocktail with plenty of Irish attitude. Designed to be enjoyed over ice, it’s a summer sipper with a smoky nighttime edge.
Serve over ice with a garnish of candied ginger.
