Jean-François Ganevat is a cult winemaker, hails from a long line of winemakers dating back to 1650. His 13-hectare domaine is located in La Combe Rotalier, the southernmost part of the Jura in France.
Although rooted in Jura, Ganevat’s methods are influenced by Burgundy. He gained a formal wine education there and worked as a cellar master at a prestigious domaine in Chassagne-Montrachet. Ganevat focuses on single parcel cuvées, emphasizing the estate’s micro-terroirs. White wines ferment and mature in the same barrels for at least two years, while reds undergo carbonic maceration before aging in barrels. He also experiments with unlined clay amphoras.
The domaine eschews machinery, relying on meticulous biodynamic farming by a team of one person per hectare. The complex soils (schist, chalk, and marl) and old vines (some over 100 years) contribute to low yields.
Known for experimentation, Ganevat produces over 40 cuvées annually. These include blends of ancient, outlawed grape varieties unique to the region.
