This Chardonnay comes from a plot of orthogneiss. Spontaneously fermented with indigenous yeasts and vinified without added SO2 which is off the beaten track for Chardonnay. Aged in concrete tanks for 9 months. The work in the vineyard and the cellars exercises a deep respect for nature and the environment: manual harvesting, indigenous yeasts, gravity fed (no pump). No filtration or fining. Demeter biodynamic certification since 1998.
