Sherry Mojito

Sherry Mojito

As the end of winter nears, thoughts of warm weather and outdoor adventures become ever more abundant. The shift in seasons brings an appetite for lighter fare and thirst-quenching libations, to maximize our time in the warm embrace of spring and summer. There are many drinks we gravitate towards when the snow starts to melt, but one refreshing sipper has been helping us tolerate the heat for a very long time: The Mojito.

A mojito is traditionally served in a highball, but any good quality Riedel glass will work.

Ingredients

Lustau Amontillado Los Arcos Sherry 30ml
Cachaça 51 30ml
Lime Juice 20ml
Simple Syrup (see below) 15ml
Mint Leaves 8 - 10
Soda Water Splash
Mint Sprig Garnish

How to Make Simple Syrup

  1. Dissolve 300g caster sugar in 150ml water over a low heat.
  2. Leave to cool and bottle for future use in cocktails. Store in the fridge.

Method

Add mint leaves to a highball glass and muddle gently.

Add remaining ingredients and top with club soda.

Gently stir and garnish with a mint sprig.
